This Combination of Flavors is Surprising and Satisfying. 6 oz of pork loin chops for loads of protein packed eating.
Ingredients:
- 2 Tbsp chopped onion
- 6 oz. pork loin chops
- 1/2 cup canned Italian-style stewed tomatoes
- 1/3 cup quick-cooking rice (makes 2/3 cup cooked rice)
- 1/2 cup frozen brussels sprouts
- 1 Tbsp raisins
- 2 tsp chopped almonds
Instructions:
Coat a skillet with nonstick cooking spray and preheat. Heat water for rice. Chop onion and trim fat from chops. Cook chops over medium-high heat for 2 minutes or until cooked on each side. Add onion and tomatoes to pan and continue cooking for 5 minutes. While cops are cooking, cook rice in boiling water and heat brussels sprouts in microwave, according to package instructions. Drain rice and toss with raisins and almonds.
